3 Fresh Fruit Pie Recipes for Mother’s Day

It’s finally the beginning of spring, which calls for incorporating freshly bloomed ingredients into all recipes. The month of May is known for the ripest cherries, apricots, rhubarb, and strawberries—the perfect additions to pastries and pies. Enjoy these 3 fresh fruit pie recipes to spoil your mom with this May 14th!

1. Fresh Strawberry Pie

Ingredients:

-1 sheet refrigerated pie crust

-¾ cup sugar

-2 tablespoons cornstarch

-1 cup water

-1 package (3 ounces) strawberry gelatin

-4 cups sliced fresh strawberries

-Whipped cream, optional

Directions:

  1. Preheat the oven to 450 degrees. 
  2. Unroll the pie crust into a 9 inch pie plate. Trim the edge. Line the crust with heavy-duty foil or parchment paper.
  3. Bake for 8 minutes. Remove foil or parchment and bake for 5 additional minutes. Cool on a wire rack.
  4. In a small saucepan, combine the sugar, cornstarch, and water until smooth. Bring to a boil; cook and stir until thickened (about 2 minutes).
  5. Remove from heat and stir in gelatin until it’s dissolved. 
  6. Refrigerate until slightly cooled (about 15-20 minutes).
  7. Meanwhile, arrange sliced strawberries into the crust. Pour gelatin mixture over the berries. 
  8. Refrigerate until set. If desired, serve with whipped cream.

2. Apricot Pie

Ingredients:

-5-6 cups fresh apricots

-1 cup sugar

-⅓ cup all-purpose flour

-1 teaspoon fresh lemon juice

-⅛ teaspoon nutmeg

-¼ teaspoon vanilla extract

-Pastry for double-crust pie (9 inches)

-1 teaspoon sugar for sprinkling

Directions:

  1. Preheat the oven to 400 degrees.
  2. Wash and dry about 2 pounds of apricots.
  3. Split the fresh apricots in half and measure out about 5-6 cups. Place the apricot halves into a large mixing bowl.
  4. Add the sugar, flour, lemon juice, nutmeg, and vanilla to the apricot halves. Mix well. Set aside.
  5. Place one pie shell in a 9 inch baking dish. One a cutting board, slive the other pie shell into strips.
  6. Pour the fresh apricot pie filling into the baking dish.
  7. For the lattice, place one of the strips down the center of the pie, then take another strip and place it across the center going in the opposite direction. Keep adding strips of the pie shell, weaving as needed to create the lattice pattern.  
  8. Crimp together the bottom shell with the strips of dough. Sprinkle lightly with about a teaspoon of sugar.
  9. Bake until golden brown, about 45 minutes. Cool and enjoy!

3. Rhubarb Cherry Pie

Ingredients:

-3 cups fresh rhubarb (sliced into ½-inch pieced)

-2 cups tart red cherries, pitted

-1 ¼ cups sugar

-¼ cup quick-cooking tapioca

-Pastry for double-crust pie (9 inches)

Directions:

  1. Preheat the oven to 400 degrees.
  2. In a large bowl, combine rhubarb, cherries, sugar, and tapioca. Let stand for 15 minutes.
  3. Line a 9 inch pie plate with crust. Trim to ½ inch beyond the rim of the plate.
  4. Add filling. 
  5. Top with a lattice or other decorative crust. Trim and seal strips to edge of the bottom crust; flute edge. 
  6. Bake until the crust is golden and the filling is bubbling, about 40-50 minutes.
